Chef Simone Nicolosi is the creative and technical soul behind the pizzas at BIGA Milano. His passion for the art of pizza-making began at the age of 14 during a summer in Castellammare di Stabia, where he discovered the fascinating world of pizzerias. He hasn’t stopped kneading dough since.
With an innovative and meticulous approach, Simone is renowned for unique toppings and signature recipes, such as his double-dough pizza, which is first fried and then baked.
Named “Breakthrough Chef of the Year 2024” by Identità Golose, he is a true master at selecting fresh, high-quality ingredients. Simone combines technique and creativity to craft pizzas with unmistakable, extraordinary flavor.
